Estimating hydroxytyrosol-tyrosol derivatives amounts in cv. Cobrançosa olive oils based on the electronic tongue analysis of olive paste extracts

The estimation of hydroxytyrosol-tyrosol derivatives amounts in olive oils through the analysis pastes collected during malaxation is utmost relevance due to relationship with oils' health claim regarding protection blood lipids from oxidative stress. Olive were industrial extraction cv. Cobrançosa (0–60 min; 22–34 °C). Total phenolic contents pastes' extracts assessed (2800–5400 mg GAE/kg paste). Oils laboratory-extracted each paste and, after acid hydrolysis, hydroxytyrosol and tyrosol as their sum determined (25–135, 62–120 68–255 mg/kg oil). analyzed a lab-made potentiometric electronic tongue. device enabled estimating total (internal-validation: correlation coefficient ≥ 0.86, root mean square error ≤ 392 GAE/kg). Moreover, tongue allowed more satisfactory indirect secoiridoids 0.91, 25 mg/kg), based on profiles, without requiring oils’ posteriori invasive/destructive analysis. Thus, could be foreseen potential tool for anticipating fulfilment extraction. • producers consumers seek healthier oils. HPLC confirm time-consuming. possibility analyze grants expedite decisions.
